Actually, if you watch the special on the Smithsonian's restoration of the TOS Enterprise model, they talk about how the iconic spacecraft was actually a very soft green. You can see it in the images of the restored model. Apparently the photography technology at the time wasn't capable of picking up the subtle color and it came off as light gray.
