I'm a particularly casual gamer, so my answer will probably differ from many others, but I absolutely hate the rats in <em>Elden Ring</em>. I know they're really easy to kill, but there's nothing more frustrating than them coming out of nowhere and cornering you. I also absolutely despise any enemy that shoots you with magic, a catapult, or some other ranged weapon from far away.
